Plant-Based 101 - Vegan Green Chili Queso

Queso, sometimes referred to as chili con queso is a melted creamy cheese dip usually served with tortilla chips. It also tops many dishes in Mexican food restaurants.

This particular recipes creaminess comes from cashews and white potatoes. If using a high speed blender, it is not necessary to soak the cashews. If not, it is best to soak them in HOT water for at least 30 minutes. Soaking will allow for a much creamier texture.

The green chilies in this recipe give the queso an authentic taste as like what you would find in a restaurant. The combination of the green chilies, cashews and nutritional yeast provide a burst of flavor that pairs so nicely with tortilla chips or any Mexican dish. Chopped jalapeños can also be added for a bit of spice.

The simplicity of the recipe is also nice. All of the ingredients are placed into a high speed blender and blended until creamy. Once blended the queso is ready to serve and enjoy.

  • 1 High Speed Blender

Ingredients
  

  • 1-1/2 cups white potatoes, cooked
  • 4 oz can green chilies, chopped
  • 1/2  red bell pepper
  • 1-1/2 tbsp lemon juice
  • 3 tbsp Nutritional yeast
  • 1-1/4 tea salt, optional
  • 3/4 cup raw cashews
  • 3/4 cup  water

Instructions
 

  • Add all ingredients to a high speed blender, reserving a couple of tablespoons of the green chilies to stir in finished queso (if desired).
  • Blend on high for 2 minutes or until mixture is creamy and smooth.
  • Stir in the reserved 2 tablespoons of green chilies.
  • Enjoy!
