This particular recipes creaminess comes from cashews and white potatoes. If using a high speed blender, it is not necessary to soak the cashews. If not, it is best to soak them in HOT water for at least 30 minutes. Soaking will allow for a much creamier texture.
The green chilies in this recipe give the queso an authentic taste as like what you would find in a restaurant. - 1 High Speed Blender
Ingredients
- 1-1/2 cups white potatoes, cooked
- 4 oz can green chilies, chopped
- 1/2 red bell pepper
- 1-1/2 tbsp lemon juice
- 3 tbsp Nutritional yeast
- 1-1/4 tea salt, optional
- 3/4 cup raw cashews
- 3/4 cup water
Instructions
- Add all ingredients to a high speed blender, reserving a couple of tablespoons of the green chilies to stir in finished queso (if desired).
- Blend on high for 2 minutes or until mixture is creamy and smooth.
- Stir in the reserved 2 tablespoons of green chilies.
- Enjoy!
